Salt and Vinegar Crumbed Fish

Ingredients

  • 400g white fish fillets
  • 1 large packet of salt and vinegar chips
  • 1/3 cup plain flour
  • Salt and pepper to season
  • 1 tsp paprika
  • 1 tbsp white vinegar
  • 3 eggs

Method

  • slice fish fillets into bite size pieces
  • blitz chips in food processor until a crumb forms
  • mix chips, flour, salt, pepper and paprika together in a shallow bowl
  • scramble eggs and whisk vinegar into mixture, place into a separate shallow bowl
  • coat fish pieces in crumb mixture, dredge in egg mixture and coat once more in crumbs
  • place on a floured tray and refrigerate for 30 mins
  • deep fry in hot oil for approximately 3 minutes (until golden and cooked through)
  • blot on paper towel
  • enjoy
