Ingredients
- 400g white fish fillets
- 1 large packet of salt and vinegar chips
- 1/3 cup plain flour
- Salt and pepper to season
- 1 tsp paprika
- 1 tbsp white vinegar
- 3 eggs
Method
- slice fish fillets into bite size pieces
- blitz chips in food processor until a crumb forms
- mix chips, flour, salt, pepper and paprika together in a shallow bowl
- scramble eggs and whisk vinegar into mixture, place into a separate shallow bowl
- coat fish pieces in crumb mixture, dredge in egg mixture and coat once more in crumbs
- place on a floured tray and refrigerate for 30 mins
- deep fry in hot oil for approximately 3 minutes (until golden and cooked through)
- blot on paper towel
