Ingredients
- 500gm cooked prawns
- 4 eggs
- 1/4 tsp saffron
- 2 pieces of bread
- 2 large cloves of garlic
- 1/3 bunch or parsley
- 1/3 bunch or corriander
- 1/4 cup of sweet chilli sauce
- 2 tsp keens curry powder
- 2 tsp salt
- 1 tsp cracked pepper
- 1 tsp of paprika
- 1 cup of breadcrumbs
- 1/2 plain flour
- frying oil
Method
- Whisk 2 eggs and add saffron to soak in a small bowl (set aside)
- Peel and clean prawns
- Add herbs and garlic to bowl of food processor and blitz until finely chopped
- Tear up bread and together with prawn meat add to other ingredients and blitz (wipe down sides with a spatula)
- Add egg, sweet chilli sauce, salt, pepper, paprika and curry powder, and blitz until all ingredients are combined
- Empty food processor bowl into a mixing bowl and ensure all ingredients are mixed through (if mixture is not wet enough you can add extra sweet chilli sauce)
- Mix breadcrumbs and flour together in a shallow dish
- Whisk remaining eggs together in a shallow dish
- Roll mixture into small balls, dip into flour/breadcrumb mixture, then dredge in egg mix and do a final coat in the breadcrumb
- Refrigerate on a tray for 30 minutes
- Heat shallow pan of oil or deep fryer to 180, fry for 60 seconds, drain and serve hot with a dipping sauce of your choice
