Ocean Leather Jackets are caught mainly inshore near the sea bottom. They have a very tough skin, hence the name. Whole fish are usually sold with head and skin removed. Their flesh is firm, white, and sweet to eat. Their large bone structure makes them easy to eat. Fillets are boneless.
